Picklefest Sunday November 20

We will be at the Rosendale Picklefest this Sunday. In addition to a selection of empanadas, tamales and quesadillas, I'll be offering sides of pickled beets and a salsa of pickled farm stand tomatoes with jalapenos.

Vegan Tamales



One of the farms we get our produce from is Migliorelli Farm. They are a family run fruit and vegetable farm in Tivoli, NY. 

We've adjusted our recipe for a few of our tamales and are pleased to be able to offer you our new Vegan Curried Shiitake Mushroom and Bok Choy Tamales, featuring Bok Choy from Migliorelli and Shiitake mushrooms from Wiltbank Farm. Our Butternut Squash Tamale is also now Vegan.

Wiltbank Farm


We've mentioned him before, but wanted to make another introduction. This is Gary from Wiltbank Farm. He brings the most beautiful mushrooms to the Rhinebeck Farmers Market. We use these in our Curried Shiitake/Bok Choy Tamales and our Shiitake Empanadas. Sometimes we make Shiitake AND Oyster Mushroom tamales with Grilled Veggies




Here, Gary is telling us about these amazing oyster mushrooms. They usually grow in warmer climates but Gary is set up to farm these indoors so he can still bring us these beauties in the colder temperatures.

Thanksgiving Tamales


We are pleased to let you know we are bringing back our popular THANKSGIVING in a corn husk for a limited time only! These tamales are made using traditional turkey stuffing herbs with organic flour masa, combined with roasted free range turkey and homemade gravy. Serve it with our cranberry chipotle chutney and you've got a great new way to do Thanksgiving this year.
If you need sides to go with your traditional Thanksgiving spread this year, try our Butternut Squash tamales or our empanadas, our Sweet Potato Gratin or Southwesten Potato Salad. For dessert we are offering our new Sweet Apple Empanadas.

Menu for Festival of Eden

In our last post, we announced we will be at the Festival of Eden this Sunday, September 25, 12-7pm. As the Fall season begins, I've been playing around in the kitchen coming up with new ways to include seasonal produce such as apples and root veggies into my recipes. 
For the Festival I'll be serving an all vegetarian menu including my new roasted root vegetable and mozzarella cheese tacos. 

Some new tamale combos include: 


Apple with Cheddar and Parmesan, Butternut Squash with Almond Butter, Potato and Leek with local Shiitake and Oyster Mushrooms, and Collard Greens with Shiitake Mushrooms and Curry sauce. Sweet Potato tamales and Black Bean tamales will be on the menu as well as our Tomato Tortilla soup.

Festival of Eden

We're pleased to announce that we will be participating in the Festival of Eden at the Eden Village Camp this Sunday, September 25 from 12-7pm.

Eden Village Camp will be hosting the first annual Festival of Eden, a day full of farming and greening workshops, local organic food from our own and neighboring farms, live music, art, and nature adventures on our gorgeous 248-acre site in the Hudson Valley. All of the proceeds from the day will go to the Eden Village Camp Scholarship Fund.

We are looking forward to being a vendor at MOEDOWN for the 3 day music festival, September 2, 3, 4 at the Gelsten Castle Estates in Mohawk, NY! Garrison Art Center Fine Craft Fair August 20 and 21



We are pleased to let you know that we will be one of the local vendors at the upcoming Garrison Fine Craft Fair
This Saturday and Sunday, August 20 and 21, from 10 - 5pm.


In addition to our tamales, we'll be serving some special menu items. 


Tamales: Tomatillo chicken/ Vegetarian swiss chard and locally grown shiitake mushroom/ Pulled pork bbq tamale/ Peanut chipotle beef 

Quesadillas: White bean pesto/ Prosciutto and mozzarella

We will also have our new Buffalo chicken sandwiches with blue cheese.

Our organic corn flour comes from the Wild Hive Farm at Clinton Corners, New York. We combine this with fresh grilled corn to make the masa for our tamales.

Worked on my spinach and mushroom tamale with roasted garlic sauce--will bring them to the Park Slope market this Sunday!  I will try to make more next week so I can get them to my other markets.  The mushrooms are shitake and came from Wiltbank Farm in Saugerties; the spinach is organic and came from Taliaferro Farms in New Paltz. I also made lots of home made cilantro, scallion and garlic tortilla chips.  I should have enough for Cold Spring, Park Slope and Rhinebeck.  The chips come with a salsa that has beets as a base, but also fennel, red onion, jalapeno, and cilantro--might sound strange, but it turned out to be a great combo.  A white bean dip also comes with the chips.  So, come out and try some of the new offerings!
