For the Festival I'll be serving an all vegetarian menu including my new roasted root vegetable and mozzarella cheese tacos.
Apple with Cheddar and Parmesan, Butternut Squash with Almond Butter, Potato and Leek with local Shiitake and Oyster Mushrooms, and Collard Greens with Shiitake Mushrooms and Curry sauce. Sweet Potato tamales and Black Bean tamales will be on the menu as well as our Tomato Tortilla soup.

Above, our new shiitake mushroom and collard greens with curry sauce tamale that we are introducing this week at our Pleasantville and Kingston markets as well as at the Festival of Eden. Mushrooms come from Gary at Wiltbank Farms in Saugerties, NY.
